Evaporation is far too small to change your reading. Over a normal day at room temperature, a bowl of water loses only a few millilitres to evaporation a fraction of the roughly 200 ml a healthy cat drinks. That's not enough to move the water across a color zone. Your cat's drinking moves the level dramatically; the air barely touches it. And because you refill to the same line every morning, any tiny bit of evaporation is the same day to day, so it never skews the pattern you're watching.

Not at all. The color zones are based on established veterinary guidance that cats need roughly 40–60 ml of water per kg of body weight each day. For most cats around 5 kg / 11 lbs that works out to a daily requirement of about 200 ml minimum.

Great question, wet food is genuinely one of the best things you can do for your cat's hydration, it's around 70–80% water, so a wet-food cat gets a big share of her daily needs straight from her meals and will naturally drink less from the bowl. That's completely normal and healthy.
